Beetroot and carrot soup!
THIS IS SO GOOD I am eating it right now. It is SO GOOD. Like velvet in food form.
Make a simple carrot soup (1lb carrots, chicken stock, fried onion, ground coriander, bay leaf) but substitute 1/2 - 1 beetroot for two or three carrots. Simmer for two hours (covered) and blend once cool. Add cream if you like.
IMPORTANT NOTE: Remember to take the bay leaf out before you blend.
